What you need
- 800 g or 4-5 large potatoes, cut into sticks
- 60 ml (1/4 cup) olive or canola oil
- 2 ml (1/2 tsp) regular or smoky paprika
- Salt and pepper, to taste
Let's go cooking
Preheat the oven, rack in the middle, at 230°C (450°F).
In a bowl, coat potatoes in oil and paprika. Spread on a cooking sheet and bake 20 min. Turn fries and continue cooking until golden outside and tender inside.
You can replace the paprika with onion or garlic powder or with “Montreal Style” steak spices.

Canola oil and peanut oil are recommended because of their high, smoking point and better heat resistance. Duck fat also resists well to high temperatures and provides great taste.
