What you need
- 900 g (2lbs) or 4-5 potatoes
- 115 g (1/4lb) butter
- 125ml (1/2 cup) milk or cream
- Salt, pepper and nutmeg, to taste
Let's go cooking
In a pot full of cold water, add potatoes, salt and bring to a boil. Cook around 20 minutes or until tender. Drain. Mash potatoes with butter. Add in milk or cream, then your favorite seasonings. With a hand-mixer, purée until smooth. Avoid over-mixing or potatoes will turn sticky. Season to taste and add milk if needed.
Fine herbs & Flavorings: Before cooking, add an onion cut into wedges or 2-3 garlic cloves to potato cooking water. Flavor your mashed potatoes with your choice of chives, finely chopped green onions, roasted garlic or minced arugula.
Cheese: While mashed potatoes are still very hot, add your choice of favorite cheese: crumbled Blue cheese or grated Oka, Swiss, Parmesan, Romano or Cheddar, all are excellent choices.
