Dill Potato and Salmon Salad

Ingredients
- 4 potatoes
- 4 slices of smoked salmon
- 2 tbsp. lemon juice
- 5 tbsp. extra virgin olive oil
- 1 tbsp. chopped fresh dill
- Sea salt and black pepper
Preparation
Peel potatoes, cut into pieces, and steam for about 15 minutes, until just tender but not overcooked. Drain and let cool.
Meanwhile, prepare the vinaigrette by mixing lemon juice, dill, and oil.
Place warm potatoes in the serving dish. Add the vinaigrette. Season with salt and pepper and mix.
Serve the potatoes with a slice of smoked salmon and a dill sauce.

Note
For a vegetarian version, leave out the salmon and add liquid cream to the seasoning.
