Ingredients

  • 60 ml (1/4 cup) smooth, cold mashed potatoes (no butter or milk)
  • 7.5 ml (1 1/2 tsp.) vanilla extract
  • 750 ml (3 cups) powdered sugar
  • 75 ml (1/3 cup) crunchy peanut butter

Preparation

  1. In a bowl, mix mashed potatoes and vanilla.

    Add powdered sugar a little at a time, using a wooden spoon, to make a soft, yet manageable dough.

  2. Sprinkle a work surface with powdered sugar.

    Knead the puree for a few minutes to give it the texture of pie dough.

    On parchment paper, roll out dough to a 35 x 20 cm (14 x 8 in.) rectangle.

  3. Warm the peanut butter in the microwave for a few seconds and spread it over the dough.

    Lifting the paper, roll the dough into a roll about 35 cm (14 inches) long.

    Slide onto a baking sheet and refrigerate for about 1 hour. Cut into about 20 1-cm (1/2-inch) slices.

  4. Keep in a sealed container.

Note

You can add 1 or 2 drops of colorant in the dough to add a festive touch.
