Potato and goat cheese galette

Ingredients
- 700 g of potatoes
- 200 g of butter
- 250 g of flour
- 500 g of goat cheese
- 1 egg
- Salt and pepper

Preparation
Cook the peeled potatoes for about 20 minutes in salted water (or steam them). After draining them, mash them with the soft butter: a fork works very well.
Preheat the oven to 190/200°C. You can use the rotating heat for the cooking.
Add flour, goat cheese, and egg to potatoes. Mix until you obtain a soft dough that does not stick to the edges of the container.
Roll out the dough on a baking sheet covered with baking paper: form a rectangle about 2 to 3 cm thick.
Place in the oven and bake for 30 to 45 minutes (time varies according to oven and cooking method: at least 45 minutes in a revolving oven).
Let cool to room temperature and cut into regular squares or rectangles. Enjoy warm or cold as an appetizer or as a starter with a green salad.
