Ingredients

  • 800 g or 4-5 large potatoes, cut into sticks
  • 2 ml (1/2 tsp) regular or smoky paprika
  • 60 ml (1/4 cup) olive or canola oil
  • Salt and pepper, to taste

Preparation

  1. Preheat oven, middle rack, to 230°C (450°F)

  2. Peel and cut potatoes into thin strips of about 1 cm by 1 cm.

  3. In a bowl, coat potatoes with oil and paprika.

  4. Spread the fries on a baking sheet and bake for 20 minutes. Turn the fries over and continue cooking until they are golden and cooked inside.

Note

Canola oil and peanut oil are recommended because of their high, smoking point and better heat resistance.  Duck fat also resists well to high temperatures and provides a great taste.

Variant

You can replace the paprika with onion or garlic powder or with “Montreal Style” steak spices.
