Ingredients

  • 6-8 small potatoes or fingerling potatoes
  • 5 tbsp. olive oil
  • 2 cloves of garlic, pressed or chopped, if you choose
  • Fresh herbs: rosemary, thyme, chives, basil
  • Kosher salt and fresh ground pepper

Preparation

  1. Preheat oven to 180°C (350°F).

    Cut the potatoes in half without peeling them.

  2. Place potatoes on a baking sheet and drizzle with olive oil.  Season with salt and pepper and add garlic, if desired, and sprinkle with herbs of your choice. Toss to coat each potato with the oil and herb mixture.

  3. Put in the oven for 1 hour and a half.  Baste the potatoes from time to time with their oil.
